Bear Cornwall is a coffee shop in a Citroen HY Van by St Mawes Castle. "Lucy’s been experimenting in the kitchen again! We trialled these Chelsea Buns in the van yesterday and they flew out. They are full of walnuts, cashews and pistachio nuts with the traditional cinnamon, sugar and butter. To keep with baklava theme they have a delicious honey glaze. I've got everything crossed."

It was one of the technical challenges and the recipe was briefly on screen, so I made them while repeatedly pausing and rewinding. The recipe is perfect – authentic and delicious.
