An alternative take on a Chelsea Bun baked for the #worldchelseabunawards

One of the first things I did when we moved to Chelsea was learn how to make Chelsea Buns. V happy to have spent a sunny afternoon this past weekend putting my skills to the test for the @world.chelsea.bun.awards bake-off that in normal times would have taken place just down the street, but is now on insta! I took the liberty of assuming that my new mantra, ‘there are no rules in lockdown baking’ applied. Hence when Tesco was out of currants and lemons, I swapped in dried apricots and prunes and orange zest instead. The mixed spices I used were also a lockdown concoction of sorts: maple powder, ground ginger, thyme, nutmeg, anise and cloves. And you know what? They look like Chelsea Buns, they taste like Chelsea Buns, so lockdown be damned they must be Chelsea Buns! I know, I know, these aren't hats. But I've been baking a lot lately and wanted to enter the @world.chelsea.bun.awards so 🤷🏻‍♀️ These are actually vegan (our egg supply was running low) and would have been refined sugar-free had 90% of people not voted to add an icing drizzle in my stories - you're animals. Also my first attempt at baking Chelsea buns so I'm pretty pleased. The competition also benefits the @childrensurgeryfoundation so it's all for a good cause. The hat action returns later in the week when I'll dress up and pretend the @kentuckyderby and Oaks are still on. 👒🥃
