Apricot, Prune & Orange Chelsea Buns by @ourchelseakitchen

One of the first things I did when we moved to Chelsea was learn how to make Chelsea Buns. V happy to have spent a sunny afternoon this past weekend putting my skills to the test for the @world.chelsea.bun.awards bake-off that in normal times would have taken place just down the street, but is now on insta! I took the liberty of assuming that my new mantra, ‘there are no rules in lockdown baking’ applied. Hence when Tesco was out of currants and lemons, I swapped in dried apricots and prunes and orange zest instead. The mixed spices I used were also a lockdown concoction of sorts: maple powder, ground ginger, thyme, nutmeg, anise and cloves. And you know what? They look like Chelsea Buns, they taste like Chelsea Buns, so lockdown be damned they must be Chelsea Buns! I also did my husband and I a bit of a favour by making these a half batch (you wouldn’t believe the cakes drawer in our freezer right now...) #WorldChelseaBunDay #WorldChelseaBunAwards . . . . . . . . #chelseabuns #bakeoff #instabake #instayum #thebakefeed #bakefromscratch #chelseabun #food52 #f52grams #imsomartha #sweettooth #tasty #foodporn #foodstagram #foodphotography #foodie #bakersofinstagram #bakersgonnabake #ab
